Thanksgiving Recipes

I had a reader email me about posting Thanksgiving recipes!  I think that is an AWESOME ideal!

Canning Deer Meat


I have had many emails and questions on how to can deer meat!  Well, it is very simple and I have to thank my friend Misty for sharing this with me a couple of years ago!

I cut my deer into bite size pieces and then I cover with water for a couple of days.  ( this helps draw the blood out ;)  I drain the water a couple times a day and replace with more water.

When I am ready to can this is my process.... ( make sure your jars are ready by having them hot, I usually run my through the dishwasher)

1.  I cook the meat on the stovetop in water for about 15 minutes.
2. I then ladle the meat into the jars and add 2 beef bouillon cubes to quart jars or 1 cube to pint jars.  I then add add the juice from cooking the meat until about 1 inch from top of jar.
3.  Place sterile lid and cap on Jars. 
4.  Place in Pressure Canner for 90 minutes - you HAVE to use a Pressure Canner for meats!

The beef cubes take the deer taste out of the deer.  We usually use the meat as Kettle Deer, or in soup or chili!  :)

Taco Soup Recipe

Many of you have asked about a Taco Soup Recipe.  There are many taco soup recipes on the internet but basically many have the same ideal.  You can add things like tomatoes, more beans, or whatever your family prefers!


Taco Soup recipe
2lb Ground beef or ground turkey or even deer ;)
1 pkg. taco seasoning
1 pkg ranch salad dressing mix
1 1/2 cups water
1 can chili beans
1 can whole kernal corn
1 can pinto beans
1 can stewed tomatoes
1 can diced green chilies

Cook meat and drain add taco seasoning and mix well and then add all the other ingredients.  I usually add more water and sometimes do not use any chili beans just pinto beans, just depends on what I have in the pantry.  I also do not add green chilies because my kids do not like anything 'hot'!

Then you can garnish with tortilla or corn chips, shredded cheese and sour cream :)

Tater Tot Recipe and Pumpkin Cake

Here are the 2 recipes I promised ya! 

Tater Tot Cassarole - This is the Duggar's Recipe!  Very easy and tasty!

2 lb ground turkey cooked, seasoned, drained

3 2lb bags tater tots
2 cans cream of mushroom
2 cans evaporated milk
2 cans cream of chicken
Brown meat & place in large cass. dish.
Cover with tater tots. Mix soup & milk together.
Pour over top. Bake at 350 for 1 Hour.
Makes 2- 9”X13” pans

Pumpkin Pie Cake - oh so good!! - this comes from Eat Cake For Dinner Blog, check it out!  There are some GREAT recipes!

1 box yellow cake mix

3 eggs
1 c. margarine
2 c. canned pumpkin
3/4 c. sugar
1 can evaporated milk
1 tsp. cinnamon
1/2 tsp. ground ginger
1/8 tsp. ground cloves
1/2 c. sugar
1 tsp. cinnamon


Reserve 1 cup cake mix; set aside. Combine remaining cake mix, 1 egg and 1/2 cup melted margarine. Spread into the bottom of a 9x13 pan. Mix canned milk, pumpkin, 2 eggs, 3/4 cup sugar, 1 tsp. cinnamon, ginger and cloves. Beat until fluffy. Pour over crust. Combine reserved cake mix, 1/2 cup sugar and 1 tsp. cinnamon. Cut in remaining 1/2 cup margarine until it is about the size of peas. Sprinkle topping over pumpkin filling. Bake at 350 degrees for one hour. Serve warm with Cool Whip or whipping cream.



This cake is soooo much better than regular pumpkin pie!

Strawberry Bread

My family LOVES strawberries!  Infact I am dehyrating strawberry fruit rollups right now.  All fruit, no sugar and some great tasting fruit rollups in my dehyrator.

Also, Strawberry bread has become another favorite in my family's household.!

With strawberries being .99 this week at Aldi's you can make some strawberry bread!  Infact the bread will also freeze well, for a great treat in the fall or winter.

Strawberry bread

2- 10oz pkg. frozen strawberries, thawed - I used 2 cups of fresh crushed strawberries ( I crushed them in my food processor)
4 eggs
1 1/4 cup oil
2 cups sugar
1 TPSP cinnamon
1 tsp salt
1 tsp baking soda
3 cups flour
 1 cup chopped nuts  ( opt) I don't like nuts in my bread. :)

**Also, I make a crumb topping for my strawberry breads and my banana breads.
flour, brown sugar and butter. I just chop up the butter with the flour and brown sugar and sprinkle on top of bread before baking :)

Combine strawberries, eggs, oil, and sugar in large bowl, mix well.  Add dry ingredients and nuts, stir until just blended. Spoon into 2 greased and floured loaf pans ( 5" x 9").  Bake a 350 for 1 hour or until bread tests done!

Recipe of the Day: Mocha Chiller

Today's recipe is submitted by Eileen


Mocha Chiller

1/2 gallon milk (I use 1%)
1 qt half and half
1 pot of coffee (brewed strong and cooled)
2 cups sugar or Splenda
1 tsp vanilla
6 heaping Tbs. Nestles Chocolate quick (can use sugar free)


Mix well and chill. Serve over ice with some Reddi Whip and a drizzle with chocolate Syrup!

Recipe of the Day: Death by Chocolate Trifle

Today's recipe is submitted by Brooke D.

Death by Chocolate Trifle



1 Box Brownie mix (and items needed to make it)
2 small boxes chocolate instant chocolate pudding (4 cups milk)
3 Mr Goodbars
1 container of whipped topping


Bake brownie mix according to package in 13X9 pan. Cool.


Mix pudding with 4 cups milk.


After brownies have cooled, layer in a trifle bowl. Brownies first, chocolate pudding, whipped topping, then 1 Mr Goodbar broken into pieces. Layer three times and finish with whipped topping and candy bar on top. Chill for at least 6 hours.


This can also be made in a single layer in a 13X9 pan.

Recipe of the Day: Scotch-a-roos‏

Scotch-a-roos

7 cups of Special K or Total cereal in large mixing bowl (Generic cereal is fine)



*In a sauce pan melt till sugar is disolved, (do not boil):
1 cup sugar
1 cup Karo syrup
turn off heat and stir in :
1 cup Peanut butter
*pour mixture over cereal and fold till evenly covered and pour into a 11 x 13 in dish


Melt :
1 cup Butter Scotch or/ Peanut butter chips
1 cup chocolate chips
*Stir together and spread over cereal mixure. Let set till cooled and cut into squares.

Recipe of the Day!

Easy Meatball Recipe

1 can (13 oz) evaporated milk
3 lbs ground beef
2 cups oatmeal
2 eggs
1 cup chopped onion
1/2 tsp garlic powder
2 tsp salt
1/2 tsp pepper
2 tsp chilli powder

Mix all ingredients, shape into balls. Place in flat pan and only 1 layer to pan.

Sauce
2 cups ketchup
1/2 cup brown sugar
2 Tb liquid smoke
1/2 tsp garlic powder
1/2 cup chopped onion

Heat all ingredients, pour sauce over meatballs. Bake 1 hour at 350°.

Recipe of the Day

Here is today's Recipe of the Day Submitted by Mandy A from Alabama

Mandarin Poke Cake


1 – yellow or white cake mix
2 – small cans of mandarin oranges
1 – package vanilla instant pudding
2 – TBSP vanilla extract
8 oz cool whip
1 – small orange jello packet
2 – cups milk
1 ½ - cup of boiling water


Mix cake mix according to instructions on box. Add in 1 can of drained orange slices and beat until desired consistency. Bake as directed on box in a 9x13 pan. After cake has finished baking, mix orange jello with 1 ½ cups of boiling water. After cake is almost cooled, poke holes in cake top and pour jello over cake aiming more for the holes.


Allow cake to cool. Refrigerate to speed the process. While cake cools, mix vanilla pudding with 2 cups of milk, add in 2 TBSP vanilla and fold in cool whip. Then spread over cake top. You can garnish the cake top with the other can of oranges. (optional)


This is a very versatile recipe. You can use any combination of fruits and jello flavors as you can think of.

Recipe of the Day

GOOEY BUTTER CAKE



1 box yellow cake mix
1/2 butter, melted
1 egg


Mix cake mix, melted butter and egg with a fork. Press into a 9 X 13 greased baking dish.


1 - 8 oz. pkg. cream cheese
1 box powdered sugar (1 lb.)
2 eggs


Beat softened cream cheese till smooth. Beat in eggs, then add powdered sugar. Pour over cake mixture and bake at 350 degrees for 30-40 minutes Just till set. Dust a little powdered sugar over top while still warm.

Blue Cheese & Bacon Tomatoes

1 sleeve round buttery crackers, crushed
1 (5-ounce) container crumbled blue cheese
1/2 pound bacon, cooked and crumbled
1/4 cup finely chopped green onions
8 tablespoons (1 stick) butter, melted
3 large tomatoes, cut in half crosswise
1/4 teaspoon salt
1/4 teaspoon ground black pepper


Directions


Preheat the oven to 500 F. Line a small rimmed baking sheet with aluminum foil.


In a small bowl, combine the cracker crumbs, blue cheese, bacon, and green onions. Add the butter, stirring to mix well. Place the tomatoes, cut sides up, on the prepared baking sheet. Sprinkle the tomato halves evenly with the salt and pepper. Divide the cracker mixture evenly among the tomato halves. Broil 5 inches from the heat with the oven door cracked open until lightly browned, 6 to 8 minutes

Recipe of the Day

Strawberry Rhubarb Crisp - one word....AMAZING!!!

1 quart strawberries, stemmed and quartered

4 stalks rhubarb, cut into 1/2-inch lengths
1/2 cup sugar
3 TBSP cornstarch
1 orange, zested and juice

Topping:

1 1/4 cups whole-wheat flour
1/2 cup rolled oats
1 cup brown sugar
1 1/4 sticks butter, cut into pea-sized pieces
1 teaspoon vanilla extract
Pinch salt
1 to 2 tablespoons water

Directions

Whipped cream or ice cream, for serving
Preheat the oven to 350 degrees F.

Filling:
Combine all of the ingredients in a large bowl and stir to be sure everything is well combined. Spoon the filling into 8 individual ramekins or 1 wide shallow baking dish.

Topping:
In a food processor combine the flour, oats and brown sugar and pulse to combine. Add the butter, vanilla and salt and pulse pulse pulse until the mixture looks dry and crumbly. Add 1 tablespoon of water and pulse until the mixture starts to come together and look crumbly. If the mixture still seems dry add 1 more tablespoon of water and pulse to combine.

Crumble the topping over the filling. Bake in the preheated oven until the filling is hot and bubbly all the way through and the topping looks crispy and light brown, about 25 to 30 minutes. Serve warm with whipped cream or ice cream

No cook Strawberry Freezer Jam

So, I know many people are nervous about making jelly.  Well, here is an easy easy recipe for beginners and there is NO COOKING ( well accept boiling water)! 

You might grow your own strawberries or you can get them for .99 lb at Aldi's this week ( or price match at Walmart ;)  so, that is a couple of ways to get your strawberries!

4 c. ripe strawberries ( you will need 2 1lb containers)

4 c. granulated sugar
1 box Sure-Jell powdered pectin
3/4 c. water


Wash and hull the berries; crush them completely, a few at a time. (Should end up with 2 cups.) I have even put the strawberries in the food processor.  
In large bowl, mix together the berries and sugar. Let stand 10 minutes.
Combine pectin and water in saucepan. ( ok so I said no cook but this is easy ;)
Bring to boil; boil 1 minute, stirring constantly.
Stir hot pectin into the fruit bowl; continue stirring.
Don't worry if sugar is not completely dissolved.
Ladle jam into freezer containers.
Put lids on immediately. Let stand at room temperature 24 hours or until set.
Refrigerate for a few weeks or freeze for up to a year.
 
I put my jam in my mason jars which can also go in the freezer.

Grape Jelly from Frozen Concentrate Juice

I have been asked about the Grape Jelly Recipe I make! 
3 cups grape juice ( bottled Juice, or you can also use frozen concentrate but make sure to add water like the package says on the can of juice)

5 1/4 cups white sugar
1 (2 ounce) package powdered fruit pectin

1.Sterilize and dry jars for jelly, and set side. I like to use my dishwasher. New lids are recommended for best results.



2.Combine grape juice and pectin in a large pot over medium-high heat. Bring to a boil, and stir one minute at a rolling boil. Stir in sugar for a few minutes to completely dissolve. Remove from heat.


3.Ladle the hot jelly into the jars, leaving 1/2 inch of space at the top. Wipe rims of jars with a clean dry cloth. Cover with a lid and ring to seal. Let stand 24 hours at room temperature, then refrigerate. Jelly may take up to a week to set. Once set, it is ready to serve. Store in the refrigerator for up to three weeks, once set. If canning for long term storage, process in a hot water bath for 10 minutes.

(sometimes I add a little bit of pectin from another package, it seems to need just a little more to setup)

If you can this recipe it does NOT have to be in the refrigerator.  To process in hot water means, you need a hot water canner that looks like this...  The water needs to be boiling when you put your jars in.  Make sure you have the water bath rack inside the canner.

Apple Pie Jelly

I know many of you are interested in the jelly I make from the juice I get from coupons!
My first recipe I am going to share is Apple Pie Jelly!  It seems we can get Old Orchard Juice cheap or even FREE, so I use my extra Apple Juice for this great recipe!  Very simple, this was my 1st jelly I ever made!  Then I graduated to jams and apple butter!

Now I do make lots of jams from REAL fruit, like apple jam ( my grandma has an awesome apple tree, we just planted our fruit trees this spring so they won't be ready for a couple of years), peach jam, peach jam is really really good. I also make strawberry freezer jam. This is super easy, there is no cooking at all. I also make my own applesauce and cinnamin applesauce. Peaches canned in light syrup is great too!!!


Here is this awesome Apple pie jelly recipe. It is from Recipezaar. This my husband's FAVORITE jelly now.


1¼ hours 5 min prep


6 1/2 pint
4 cups apple juice(bottled)
1 tablespoon maple syrup (pure) ( this is expensive but the bottle will last a very long time)
5 cups sugar
3 teaspoons cinnamon
1 teaspoon nutmeg
1 3/4 ounces dry pectin
Place apple juice, maple syrup, cinnamon and nutmeg in a heavy saucepan.
Add the pectin and bring to a hard boil over high heat until it dissolves into the juice.


Slowly stir in the sugar and bring back to a rolling boil over high heat. Boil for one full minute (I still prefer 220 degrees on the candy thermometer!).


Remove from heat and skim off foam with a metal spoon.
Pour into jars (about 12 1/4 pint jars, or 6 1/2 pints), put on lids and process in a hot water bath for 15 minutes.
I didn't use a candy thermometer and it turned out great. I have made many many batches of this jelly and plan on restocking some this weekend. I don't always put my jelly in jelly jars. Since we go through it so quickly I put some of my in pint jars.

With my kids, we don't buy Valentine's Day Candy. We make a pasta dinner ( Italian is suppose to be romantic right ;) and then have a yummy dessert! Just being together and having a great time baking and cooking.
My husband and I do not go out on Valentine's Day, we rather be with our kids and go out another time. ( won't be as crowded then either )

Garden Fresh Greenbeans

I LOVE Greenbeans straight from our garden. They are soooo good. I started cooking them a new way (at least a new way to us :) I thought some of you might want to try it ;)

I, of course, clean them and snap the ends off. I then heat a skillet with a little of olive oil. I add the greenbeans, some onions and some garlic salt. I sautee until cooked. I LOVE greenbeans cooked this way and it changes things up :)

Now I do make lots of jams from REAL fruit, like apple jam ( my grandma has an awesome apple tree, we just planted our fruit trees this spring so they won't be ready for a couple of years), peach jam, peach jam is really really good. I also make strawberry freezer jam. This is super easy, there is no cooking at all. I also make my own applesauce and cinnamin applesauce. Peaches canned in light syrup is great too!!!
