Mandarin Poke Cake


1 – yellow or white cake mix
2 – small cans of mandarin oranges
1 – package vanilla instant pudding
2 – TBSP vanilla extract
8 oz cool whip
1 – small orange jello packet
2 – cups milk
1 ½ - cup of boiling water


Mix cake mix according to instructions on box. Add in 1 can of drained orange slices and beat until desired consistency. Bake as directed on box in a 9x13 pan. After cake has finished baking, mix orange jello with 1 ½ cups of boiling water. After cake is almost cooled, poke holes in cake top and pour jello over cake aiming more for the holes.


Allow cake to cool. Refrigerate to speed the process. While cake cools, mix vanilla pudding with 2 cups of milk, add in 2 TBSP vanilla and fold in cool whip. Then spread over cake top. You can garnish the cake top with the other can of oranges. (optional)


This is a very versatile recipe. You can use any combination of fruits and jello flavors as you can think of.
