Pumpkin Bread Recipe

This week Schnucks has a 15oz can of  pure pumpkin on sale for $1, which is a pretty good price.  Around my house we don't eat pumpkin pie BUT we love pumpkin cookies and pumpkin bread.

So, today I made Pumpkin Bread, soooo good with a glass of milk.  I thought some of you might want to try it.

3 cups canned pumpkin
1 1/2 cups vegetable oil
4 cups white sugar
4 eggs
4 3/4 cups all purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp salt
3 tsp cinnamon ( we LOVE cinnamon, but if you don't like too much you can cut it in 1/2 :)
1 1/2 tsp nutmeg
1 1/2 tsp ground cloves

Preheat oven to 350 degrees.  The recipe makes 3 loaves or you could even make muffins.  I spray my pans and THEN I use a white sugar/cinnamon mix and sprinkle the bottom and sides of the pan with it. ( oh this is good!!)

In a large bowl, mix the pumpkin, oil, sugar and the eggs. Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves then stir it into the pumpkin mixture and mix well.  Then divide into loaf pans or muffin pans. 

THEN I add a topping, I mix some flour, brown sugar, cinnamon and cut in butter and add to the top of the unbaked bread - this is really really good :)

Then bake for 45 minutes to an 1 hour!
